"Watabe's" unagi features large, fatty eel that is first grilled plain, then steamed before being grilled again in the Kanto-style tradition. The eel is steamed with tea leaves for a delicate and tender texture. It is then coated with a special sauce that has been continuously refined for over 70 years and grilled over high-powered Binchotan charcoal, resulting in a dish that is soft yet fragrant, with a melt-in-your-mouth texture.
